Sonder Ethiopia Review - A Top Tier Colorado Roaster - 10/10

Sonder Coffee is one of my favorite local spots to hang out at, get some work done, and let the afternoon go by. They have a whimsical aesthetic and they now have 2 locations in the Denver area. Sonder was started by 3 friends that roast small batch coffee, and they do it well. Their catch phrase is simply the definition of sonder, (n) the realization that each random passerby has a life just as vivid and complex as their own. Along with the fact that they know their way around coffee, the sheer simplicity of the brand and their all white industrial aesthetic should land them as a must visit if you are in the area. That being said, I have tried their Kenya roast and their Ethiopian roast that we are talking about today and you simply must pick up a bag online or when you stop in.

Like all reviews I try to diversify my brewing methods to let you know what I feel is the best way to enjoy this coffee. I normally brew it through a French Press, a Pour Over, and the Spinn Coffee Machine. Although Spinn is normally the winner of this bout, I would say that hands down the Pour over method in this instance takes the cake. The smell of these beans when you roast them fills the room with some lovely jasmine notes and instantly excites your senses, begging to get the liquid gold to your lips as quickly as possible. I brewed the Sonder Ethiopia single origin through the Gina by Goat Story and was transported back to the Jasmine tea fields from where I used to live in China. I used a 1:16 bean to water ratio, one that generally handles well to medium roasts and is my go-to ratio. I find the stone fruit tasting notes to be a little on the lower side compared to the other two flavor notes. I try to parse the stone fruit in between the jasmine and the papaya but I am searching for it a little harder than the other flavors. Overall this cup is a medium body delight to consume in the morning. The flavors work together in harmony and I love the acidity and floral notes on the nose and the tropical papaya finish.

Overall the Sonder Coffee Ethiopia is a well tailored single origin roast. I would recommend this to even my worst enemy. The powerful tasting notes of Jasmine and Papaya are incredibly pleasant and the aroma that these beans exude is impeccable. I would recommend that you brew Sonder’s Ethiopia through a traditional Pour over with the drip in second place. If you frequently use a French press I would stay away from this bag as you might not get the desired flavors from the beans. They have these beans and their other offerings in store and on their website, however, if you can I would strongly suggest that you spend the afternoon here, enjoy a lavender rose latte and pick up a bag of freshly roasted beans.
